How to add a finish to sand sculptures?
Say I have a little project going that involves a sand castle in a box. How do I immortalize it? I’ve experimented with hair spray (worthless) and a multipurpose spray adhesive (admirable, but leaves an unattractive white sheen). Is there anything that leaves it looking mostly like sand while keeping it reasonably durable, assuming it stays undisturbed in a corner most of the time? I’m considering including a clay core for added stability.

Is the sculpture already made? You can make a sand sculpture stay together if you mix glue into the sand before or as you sculpt it. Use a matte spray on the outside and that should take care of the sheen.
If the spray adhesive worked well for you I would suggest just using it and sprinkling a light coat of sand over it as it dries so that you get a good strong coat underneath and the unfinished sand look on top.

You could also try a non-yellowing spray shellac or pour an epoxy over it.
